The experience starts in a food market, the Mercado Central or Ruzafa, where the chef shows you how to choose bomba rice, garrofó beans, flat green beans and saffron. Then, in a kitchen in the centre, each guest cooks their own paella over a live flame while the chef explains the secrets of the crispy socarrat.
